Southwestern Chicken Soup

1 lb John Soules Foods Chicken Fajita Strips, cut into ½” dice
2 tbsp Vegetable Oil
½ cup Corn Kernals
1 Red Pepper, diced
1 Medium Zucchini, diced
1 Medium Yellow Onion, diced
3 Cloves Garlic, minced
1 tsp Cumin
½ tsp Coriander
1 can Stewed Tomatoes (28oz)
1 can Black Beans (10oz), rinsed and drained
3 cups Chicken Stock
3 tbsp Cilantro,picked



Heat the vegetable oil in a soup pot over medium high heat. Add the diced onion, garlic and bell pepper and cook 4 to 5 mins. or until soft. Add the cumin and coriander and cook an additional 1 min. Add the stewed tomatoes and chicken stock. Bring to boil, then reduce to a simmer. Add the corn, chicken, and black beans. Simmer for an additional 10 to 15 mins. Add cilantro, season with salt and pepper to taste and serve.
